It used to be KFC's go-to trick to take a flavor and powder it down, almost like a Mamee seasoning packet and then sprinkle that all over their chicken. Flavors like Tom yum, "spiciness", cheese, truffle etc. Nowadays, they are using a sauce method where they come up with a sauce and then drizzle that over their crispy chicken.
I think the second method is way more flavorful and doesn't have a powdery finish like the old method. It's actually not that straightforward to pour a sauce onto something crispy and make it work so props to them for that.
